This is one of my mom‘s favorite ice cream’s. So naturally as her daughter I never really took it. I honestly never really gave it a chance. Turns out it’s also my husband. So after getting the ice cream maker it was one of the first ice creams he asked for. It’s something about this ice cream maker. I’m telling you that just makes you love ice cream even more than you possibly could.
So after making out a couple of times, and having a craving naturally, I tried it. And all of a sudden I was hooked. The crunchiness of the almonds and the chew of the marshmallows just worked. I can’t believe I never really gave it a chance before.
Homemade Rocky Road Ice Cream
Now that summer is here and really rolling in hot ice cream has been on the menu. Don’t worry, I’m still making my Sourdough Sandwich Bread every other day. I did not intend for that to rhyme but it’s kinda catchy. I’m roasting flavors and going to branch out and try some new ones this year.

This recipe is a little bit different because it’s got mix ins, so there’s an extra added step. about five minutes before it’s done you’re gonna add these mix ins and they do not go in and the beginning. The reason is if you put them in the beginning, they’ll sink straight to the bottom you need your ice cream to have some thickness to it before you put in those mix ins.
I’ve noticed with ice cream that has Mix in it. It does tend to really increase the volume of the ice cream so sometimes it will come out the whole in the middle. It’s really not a big deal. I just thought I’d warn you. The first time it happened I was shocked when all of a sudden I saw ice cream coming out the middle.

Equipment
- 1 Whisk
Ingredients
- 6 Oz Cacao Powder
- ⅔ Cup Organic Sugar
- ½ Cup Brown Sugar
- 1¼ Cups Whole Milk
- 3¼ Cups Cream
- 1 Cup Marshmallows
- ½ Cup Chopped Almonds
- ½ Cup Chocolate Chunks
Instructions
- Mix together cacao powder and sugars.
- Whisk in milk until everything is dissolved, 1-2 minutes.
- Add in cream.
- Pour into your frozen Ice cream bowl and turn your machine on for 20minutes.
- After 20 minutes add in chopped almonds, marshmallows and chocolate chunks (If adding)
- Place in your ice cream containers and freezer for 2-4 hours or overnight.
