This is by no means a normal recipe from me. But, I’m human and every once in a while I need to whip up a treat quick. These 3 Ingredient Cake Box Cookies actually happen to be something I make exactly 1 time per year. My kids love “red cookies” and while I do not typically have dyes in my house. It’s a really hard color to replicate. So until I can find some better alternatives, I will be making these one time a year.

Ingredients in these cookies

Only 3 ingredients are needed for this! In all honesty, there is 4 if you want to add chocolate chips or sprinkles. The ingredients are:

  • Red Velvet Cake Mix (Or any cake mix you want to use. Funfetti is fun too!)
  • Eggs
  • Avocado Oil (or vegetable oil if that’s all you have)

You will want to preheat your oven to 350 degrees Fahrenheit.

My next goal is to make my own cake box cake mix at home. I am working on that recipe and hopefully will have that out soon! I’m going to start with vanilla and do chocolate as well. That way I always have some ready to go and won’t have to worry about going to the store for it! Let me know which type you make below!

  • Mix the cake mix, eggs, and oil together in a large bowl until a dough forms.
  • Optional: Fold in 1 cup of mix-ins (chocolate chips, nuts, sprinkles).
  • Optional – chill dough for 30 minutes. This helps with spreading.
  • Preheat oven to 350°F (175°C).
  • Scoop into 1-inch or 2-tablespoon balls and place 2 inches apart on an ungreased baking sheet.
  • Bake for 10 minutes (edges should be set but centers still soft).
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.

This prevents overspreading and keeps them thicker.
