The world seems obsessed with making everything out of cottage cheese lately. You either love it or hate it. I happen to love cottage cheese, but I hadn’t tried any of the trending recipes until I saw one that turned cottage cheese into… BREAD.

Well maybe not bread, but something that resembles it. When I saw this cottage cheese bread recipe, I had to try it for myself. This recipe could not be simpler which I love. You do need roughly a half hour to make it though, so plan ahead so you are not starving by the time it comes out of the oven. I made that mistake! It was worth it in the end.

I think it’s safe to say every household in the US has a blender and a baking sheet. That’s all the equipment you need to make this. Plus its on 2 ingredients with an optional third if you want to spice it up.

My husband thought I was crazy when I told him what I was doing. He’s use to it now though. 😜 I’m always coming up with something weird or doing something I see on the internet and he just shrugs and goes along with it. I appreciate that more than he knows.

What is cottage cheese?

This is why most people have a hard time with it… it’s curdled milk. When milk turns acidic it will separate from the milk proteins and it will form the curds that you see give it that texture. That looses people. This cottage bread cheese recipe can change your mind!

My mom loves it and always use to eat it when I was growing up. I ate it before I really knew what curdled milk was so I never had an aversion to it. A great benefit is that it is low in carbohydrates and full of protein. It is satiating so it is a good snack or lunch for anyone on a keto diet.

Making the “Bread”

For this cottage cheese bread recipe you take 1 cup cottage cheese, 1 egg and 1 Tbsp of Italian seasoning (This is optional and not needed if you don’t want to add it.) Blend until smooth in a mixer and spread onto a baking pan with parchment paper.

Bake at 350 degrees for 25-30 minutes. Keep an eye on it, it will burn at the edges if it is not even. When you are spreading it out make it as even as possible to avoid this. I have made this a couple of times now and have made mistakes and finally I am getting the hang of it.

  • Turn oven on 350 degrees.
  • Blend all ingredients together in mixer.
  • Place on parchment paper and spread into a rectangle. It shouldn't be see through, but it should all be thin and even.
  • Put in oven for 25 to 30 minutes, check often.
  • When the edges are golden brown and it is all done take it out and let it rest for 1 minute.
  • Gently peel it off parchment paper, place on a plate and make your sandwich!
