Here again with something else for you to make at home! My kids LOVE chicken nuggets. However with the deep dive I have been doing on nutrition anything processed from the store, I just do not trust right now. So I thought, it can’t be that hard, why not do it myself?
That seems to be the theme of my life lately. I don’t like what I’m seeing happen to our food so I’m trying to do my part in learning what I can do at home. Chicken nuggets seemed like an easy thing to tackle and guess what, it was.
Chicken Nuggets from the Store
When you buy chicken nuggets from the store, you are buying loads of ingredients and preservatives that do not need to be in there if you make them fresh. They add all that to make them last longer and to me, it’s just not worth it anymore.
I want to know where my food comes from. Period.
So I went down to the store and bought myself a whole organic chicken. Maybe having my own meat chickens are in my future?! And that was all I needed, everything else I had at home.
3 Ingredients
There are only 3 ingredients for homemade chicken nuggets. That’s right! Look at this list of ingredients on the back of a chicken nugget container from the store.

31 ingredients?! So unnecessary! Especially when you can make them homemade with only 3. It actually made my stomach sick. I will say this is a brand that is non-organic and for the past couple of years I have switched my kids to almost completely organic everything. The organic chicken nuggets are better than those ingredients above, but they are still highly processed and have added ingredients/preservatives that do not need to be there.
Here’s what to do:

I started with bone in breasts and leg quarters. It did take some time to debone so if you are short on time make sure you have boneless chicken ready to go!
Once it is deboned, place it into your food processor (or blender if you don’t have one) with an egg and Organic Italian Seasoning. Blend until puréed. After that, you will want to place it into the freezer for a couple hours. You do not want it completely frozen, just semi frozen. It will make it easy to cut or use cookie cutters for shapes.
I chose to do cookie cutters this time, however, you can just cut them into squares if you don’t want the extra step.
Once it is semi frozen go ahead and cut them into the shapes you wanted. Then you are going to dip them into egg and then your sourdough bread crumbs.

If you are using an air fryer Preheat to 425 degrees and cook for 12 minutes. If using an oven, place them on your baking sheet and bake at 350 degrees for about 20 minutes. This could vary a little so just check on them and make sure they are done.

Homemade Chicken Nuggets
Equipment
Ingredients
- 2½ Lbs Chicken
- 1½ Tsp Garlic Powder
- 1½ Tsp Onion Powder
- 1 Tsp Sea Salt
- 1 Cup Organic Flour
- 5 Whole Eggs
- 1½ Cups Sourdough Bread Crumbs
Instructions
- Food process chicken, garlic powder, onion powder, salt and 2 eggs together until it makes a paste.
- Put a piece of wax paper on your baking sheet and put the chicken mixture onto it.
- Take your second sheet and place it on top. Use your hands to spread it out to the thickness you want. I typically do a half inch.
- Place in freezer for 2 hours. You do not want these completely frozen, just enough to hold together and not fall apart as you are working with them.
- After two hours, take the chicken out and use your cookie cutter to make individual nuggets. (You can also just cut into squares if you are short on time.)
- Next, place flour, remaining eggs and bread crumbs in their own separate bowls.
- Dredge in flour, then the egg, then the bread crumbs.
- Repeat until all done.
- Place in air fryer at 425℉ for 12 minutes or the oven at 350℉ for 20 minutes.
