Canning Cranberry Juice is one of the easiest juices to make, so it’s a great place to start for beginners! Once you get familiar with this juice, try canning Apple Juice! During the winter months it’s easy to get cranberries at the grocery store so I stock up and make some juice. If you’re new to water bath canning, you will want to grab some supplies. Steps to Canning Cranberry Juice:
First you will want to sterilize your jars and lids. Once they are sterilized, you can add your cranberries and sugar. Then fill to 1/2 inch head space with hot (not boiling) water. Process them in a water bath canner for 25 minutes on a rolling boil. Remove and then let sit on a counter top for 24 hours untouched.
That’s why I say that this truly is such a great beginner recipe. There’s no actual “juicing” of a fruit which cuts down on time. It also saves you from extra dishes, win-win!
If you plan ahead and make this right after thanksgiving, this is also a great gift to give at Christmas! Dress it up with some fabric underneath the lid, add a gift tag and a batch of Sourdough Cinnamon Rolls. You could even add a mason jar of Hot Cocoa Mix as well!

Water Bath Canning Cranberry Juice
Equipment
Ingredients
- 10½ Cups Cranberries (I use 1 ¾ Cups per quart)
- 3 Cups Organic Sugar (I use ½ Cup per Quart, you can raise or lower this.)
- 6 Quarts Hot Water
Instructions
- Sterilize jars and lids.
- Using food funnel, measure out cranberries 1¾ cups per jar.
- Add sugar, ½ cup per jar. (You can do more or less)
- Fill with hot (not boiling) water. Wipe rims clean and add lids.
- Place in water bath canner at a rolling boil for 25 minutes.
- Remove and leave untouched on the counter for 24 hours.
