Last year I fell in love with queso. It really isn’t something you get at Mexican restaurants around my home town but I kept seeing it online. When I tried it, I loved it! I’m a big fan of cheese so it makes sense. However, for the new year I’m doing 75 Hard and my diet is keto so I needed to find a way to make it without adding any carbs. Normally I would make a roux and add cheese etc. I figured it couldn’t be that hard.

How I get this recipe high protein is through cottage cheese. Cottage cheese has 14 grams of protein for a half cup. That’s amazing! Being on Keto is especially hard when it comes to any snacking. Even though you can find products in stores that say “Keto” they almost always have hidden carbs or are “net carbs.” I’ve found that it’s just better to make as much from home as possible to not even have to worry about it.
High Protein Queso as an Appetizer
Since Super Bowl is almost here, appetizers have been on my mind. We always have a lot of food, wings included. This year I’m adding high protein queso to snack on with some 1 ingredient cheese crackers. If your planning your menu too, here’s some other sauces you might want to try:

You can add things like cayenne pepper to spice it up and add some even bigger health benefits. I have loved being on a low carb, high fat diet. I’ve noticed such a difference in my energy, mood, focus and so much more. I want to be able to feel like I’m enjoying food, and this queso has really helped in that area!

High Protein Queso
Ingredients
- 16 Oz Cottage Cheese
- 1 Can Ortega Chilies (4 oz)
- 1 Tsp Garlic Powder
- 2 Cups Shredded Cheese (I usually use Cheddar)
Instructions
- Add all ingredients into a blender, and blend until smooth.
- Then pour into your sauce pan and heat over low heat. Usually only takes 5 minutes.
- If your blender didn't do a good enough job, you can use an immersion blender once it's heated to get it silky smooth.
- Then pour into serving bowl and enjoy!
