I made this recipe multiple times throughout the holidays. I guess it should have its own place here on the blog. The holidays are always filled with so much joy. It’s a time where food brings people together. Now, it’s one of the reasons I am so glad I started my own starter. I make sourdough bread almost daily!
What is sourdough?
Sourdough is bread made from fermenting flour and water creating your “starter“. It takes about 7 days to get one going, if you haven’t yet you should start today! I have a blog post here on how to start one. The bread comes out with a tangy and sour taste that is delicious. Toasting or grilling the bread brings out the flavor even more.
I have been baking sourdough bread for over a year now and I am not stopping. For the longest time I only made sandwich bread. Literally for about a year, it was nothing but sandwich bread. My family loves it! However at the end of last year I wanted to start making everything from it. Enter sourdough dinner rolls.
Why not?
I always knew I would eventually start making everything from scratch and it just seemed like the right time. That’s how I’m starting to do everything from scratch, taking it one thing at a time. For instance, just recently I wanted coleslaw and I didn’t have any dressing. So, instead of buying it at the store I made the most delicious coleslaw dressing with a kick of spice. And guess what, it was so easy.
Why don’t we make more from home? Because stores have made everything so convenient. But in the end, we lose out. We lose out on the quality and our health because companies add preservatives to keep these products on the shelf. If you make it at home you don’t need any of that. That’s a win – win in my book.
Enter Sourdough Dinner Rolls
These rolls turn out beautifully in a 9×13 pan. I cannot find the one that I have, it’s old but beautiful. If I ever find a link to it I will add it! It’s Emile Henry and I just love their products. I got gifted one years back and fell in love.
You need to make sure you have at least 12 hours to make these. I make the dough before I go to bed and then it is ready and proofed by the morning. For me it’s the easiest way and then I don’t feel like I’m waiting around all day to make them.
After I made them a couple of times I was ready to bring them to thanksgiving dinner. They were a hit! I brought them to my in-laws house and when my mom found out, she requested them for Christmas dinner! I was happy to make sourdough dinner rolls for them.
Sourdough Dinner Rolls
Equipment
Ingredients
- 225 Grams Milk
- 75 Grams Water
- 120 Grams Starter
- 500 Grams Organic Flour
- 2 Tbsp Organic Honey
- 1 Tsp Sea Salt
- 2 Tbsp Butter (For the tops)
Instructions
- Mix milk and starter in Kitchen Aid on speed 2 until incorporated.
- On the side in a small bowl mix warm water and honey together until dissolved.
- Add the water/honey mixture to the milk/starter mixture until incorporated.
- Slowly add the flour into the liquid on speed 2. Then add salt.
- Let the Kitchen Aid Kneed this for 5-7 minutes.
- Cover and let rest overnight (or 12 hours)
- Once risen and puffy, take out of your bowl and place onto silicone mat.
- Kneed and make a nice round ball.
- Divide into 15 even pieces. I use a scale to get them as close to the right amount as possible.
- Roll into nice even balls and place them in your 9×13, into a 3 x 5 pattern. (Shown above)
- Let rise 1-2 hours.
- Preheat oven to 350℉
- Brush butter over the top of all the rolls.
- Bake for 30-35 minutes until golden brown. This time may vary for you depending on your oven or altitude.
