Ingredients
  

  • 4 Tbsp Butter
  • 1 Small onion finely diced
  • 3 Cloves Garlic minced
  • 1/4 Cup all-purpose flour
  • 2 Cups chicken broth
  • 1 Cup beer lager or pale ale
  • 1 Cup heavy cream
  • 2 Cups sharp cheddar cheese freshly shredded
  • 1 Tsp Dijon mustard
  • 1 Tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add onion and cook until soft, about 4–5 minutes.
  • Stir in garlic and cook for 30 seconds.
  • Whisk in flour and cook for 1–2 minutes.
  • Slowly add chicken broth and beer, whisking constantly.
  • Bring to a simmer and cook until slightly thickened.
  • Reduce heat to low and stir in heavy cream.
  • Gradually add cheese, stirring until fully melted.
  • Add Dijon mustard and Worcestershire sauce.
  • Season with salt and pepper, then serve warm.
