- 4 Tbsp Butter
- 1 Small onion finely diced
- 3 Cloves Garlic minced
- 1/4 Cup all-purpose flour
- 2 Cups chicken broth
- 1 Cup beer lager or pale ale
- 1 Cup heavy cream
- 2 Cups sharp cheddar cheese freshly shredded
- 1 Tsp Dijon mustard
- 1 Tsp Worcestershire sauce
- Salt and pepper to taste
Melt butter in a large pot over medium heat.
Add onion and cook until soft, about 4–5 minutes.
Stir in garlic and cook for 30 seconds.
Whisk in flour and cook for 1–2 minutes.
Slowly add chicken broth and beer, whisking constantly.
Bring to a simmer and cook until slightly thickened.
Reduce heat to low and stir in heavy cream.
Gradually add cheese, stirring until fully melted.
Add Dijon mustard and Worcestershire sauce.
Season with salt and pepper, then serve warm.
