  • Add the chocolate chips and coconut oil to a microwave-safe bowl.
  • Microwave in 20-second intervals, stirring after each interval until smooth.
  • Allow the mixture to cool slightly for 2 to 3 minutes.
  • Dip frozen ice cream bars into the chocolate or spoon the chocolate over the tops.
  • Allow the excess chocolate to drip off before placing the bars on parchment paper.
  • The chocolate will harden within seconds.
  • Enjoy immediately or return the bars to the freezer until ready to serve.

Notes

  • Refined coconut oil gives the most neutral flavor.
  • White chocolate may require an additional tablespoon of coconut oil for a smoother consistency.
  • For an extra crunchy coating, sprinkle chopped nuts, sprinkles, or crushed cookies over the chocolate before it hardens.
  • If the chocolate thickens while working, microwave for 10–15 seconds and stir before continuing.
