- 1 Small Onion Diced
- 2 Celery Stalks Diced
- 2 Cloves Garlic Minced
- 3 Tbsp Flour
- 2 Cups Clam Juice
- 2 Cans Minced Clams
- 2 Cups Russet Potatoes Peeled And Diced
- 1 Cup Whole Milk
- 1 Cup Heavy Cream
- 1 Tbsp Fresh Dill
- 1/2 Tsp Salt Adjust To Taste
- 1/2 Tsp Black Pepper
- 1/2 Tsp Old Bay Seasoning Optional
- Fresh Parsley For Garnish
Add Butter To The Pot, Then Sauté Onion And Celery Until Soft, About 5 Minutes.
Stir In Garlic And Cook For 1 Minute Until Fragrant.
Sprinkle In Flour And Cook For 1–2 Minutes, Stirring Constantly To Form A Roux.
Slowly Whisk In Clam Juice, Stirring To Prevent Lumps.
Add Potatoes, Bay Leaf, Salt, Pepper, And Old Bay. Simmer Until Potatoes Are Tender, About 15 Minutes.
Stir In Milk And Heavy Cream, Then Add The Clams With Their Juice.
Simmer Gently For 5–10 Minutes. Do Not Boil.
Remove Bay Leaf, and Adjust Seasoning As Needed.
