Ingredients
  

  • 2 Tbsp Butter
  • 1 Small Onion Diced
  • 2 Celery Stalks Diced
  • 2 Cloves Garlic Minced
  • 3 Tbsp Flour
  • 2 Cups Clam Juice
  • 2 Cans Minced Clams
  • 2 Cups Russet Potatoes Peeled And Diced
  • 1 Cup Whole Milk
  • 1 Cup Heavy Cream
  • 1 Tbsp Fresh Dill
  • 1/2 Tsp Salt Adjust To Taste
  • 1/2 Tsp Black Pepper
  • 1/2 Tsp Old Bay Seasoning Optional
  • Fresh Parsley For Garnish

Instructions
 

  • Add Butter To The Pot, Then Sauté Onion And Celery Until Soft, About 5 Minutes.
  • Stir In Garlic And Cook For 1 Minute Until Fragrant.
  • Sprinkle In Flour And Cook For 1–2 Minutes, Stirring Constantly To Form A Roux.
  • Slowly Whisk In Clam Juice, Stirring To Prevent Lumps.
  • Add Potatoes, Bay Leaf, Salt, Pepper, And Old Bay. Simmer Until Potatoes Are Tender, About 15 Minutes.
  • Stir In Milk And Heavy Cream, Then Add The Clams With Their Juice.
  • Simmer Gently For 5–10 Minutes. Do Not Boil.
  • Remove Bay Leaf, and Adjust Seasoning As Needed.
  • Let Sit For 10 Minutes Before Serving For Best Texture.
