Ingredients
  

  • 1 Small Onion Diced
  • 2 Cloves Garlic Minced
  • 2 Carrots Peeled And Diced
  • 2 Stalks Celery Diced
  • 3 Cups Potatoes Peeled And Cubed
  • 4 Cups Chicken Bone Broth
  • 1 Cup Dill Pickles Finely Chopped
  • 1/2 Cup Pickle Juice
  • 3 Tablespoons Organic Flour
  • 1 Cup Heavy Cream
  • 1/2 Cup Sour Cream
  • 1 Tablespoon Fresh Dill Chopped
  • 1 Teaspoon Sea Salt Adjust To Taste
  • 1/2 Teaspoon Crushed Black Pepper

Instructions
 

  • Melt the butter in a large pot over medium heat.
  • Add the onion, carrots, and celery, and cook until softened.
  • Stir in the garlic and cook for one minute.
  • Sprinkle in the flour and stir well to form a roux.
  • Slowly whisk in the chicken broth until smooth.
  • Add the potatoes and bring the soup to a simmer.
  • Cook until the potatoes are tender.
  • Stir in the chopped pickles and pickle juice.
  • Reduce the heat to low and slowly add the heavy cream.
  • Stir in the sour cream until fully combined.
  • Add the fresh dill, salt, and pepper.
  • Taste and adjust seasoning as needed.
  • Serve warm and garnish with extra dill if desired.
