  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Whisk together flour, baking soda, salt, and cornstarch.
  • Cream butter, brown sugar, and sugar until fluffy.
  • Add eggs and vanilla extract and mix well.
  • Gradually add dry ingredients until just combined.
  • Fold in mini chocolate chips.
  • Scoop dough into 2 tablespoon portions and lightly flatten.
  • Bake for 9–11 minutes until edges are lightly golden.
  • Cool completely.
  • Sandwich softened ice cream between two cookies.
  • Freeze for 1–2 hours before serving.
