Place flour on a silicone mat or counter and make a well in the middle.
Crack eggs into the well and use fork to mix until mostly absorbed.
Now you can kneed the dough for 5-10 minutes until the dough gets pliable and smooth.
Wrap in plastic wrap and let rest for a half hour.
Once it is done resting divide into 4 pieces and roll out into an oval strip.
Roll out to desired thinness and roll up into a tube. Cut ¼ inch strips for fettuccine noodles.
For Kitchen Aid
Set kitchen aid to a 1 and run through 2 times.
Start changing the size to be smaller and smaller each time you run it through until you get to desired thickness depending on the pasta you are making.
Meat Sauce
Brown ground beef and sausage (around 10 minutes) remove from heat and strain.
Next food process or finely chop carrots and onions.
Sauté carrots and onion until translucent, then add in the garlic. Cook for one more minute.
Add meat back in and mix.
Now add in your cans of tomato sauce and herbs, salt and pepper.
Let simmer for 20-30 minutes. (Or as long as you like.)
To Make Lasagna
In your 9 x 13 place a ladle of meat sauce.
Lay 1 layer of flat lasagna noodles on top.
Layer meat sauce, then add a layer of cheese.
Lay down another layer of pasta and repeat until the 9x13 is full.
