Add Gelatin to 1/2 cup of water and put aside.
Put maple syrup and remaining water in sauce pan and bring to a boil for 8 minutes.
Pour the maple syrup mixture into the gelatin slowly and whip on high for 7-10 minutes. (It should turn white and be the texture of marshmallow fluff.)
Spread onto your parchment paper on the sheet pan and let cool in the fridge for 1-2 hours.
Cut to desired size and enjoy!
