6 Large Eggs 1 Cup Cottage Cheese 4 Ounces Cream Cheese Softened 1 Cup Shredded Cheddar Cheese 3 –4 Jalapeños Finely Diced 6 Slices Cooked Bacon Crumbled 1/2 Teaspoon Salt 1/4 Teaspoon Black Pepper 1/4 Teaspoon Garlic Powder Optional
Preheat oven to 300°F.
Bring water to a boil for the water bath.
In a blender, combine eggs, cottage cheese, and cream cheese. Blend until smooth and creamy.
Pour mixture into a bowl and stir in cheddar cheese, jalapeños, bacon, salt, pepper, and garlic powder.
Grease a muffin tin or use silicone molds.
Pour mixture evenly into each cup.
Place muffin tin into a larger baking dish.
Carefully pour hot water into the dish until it reaches halfway up the sides.
Bake for 30–35 minutes until just set (not browned).
Let cool slightly before removing.
