Ingredients
  

  • 6 Large Eggs
  • 1 Cup Cottage Cheese
  • 4 Ounces Cream Cheese Softened
  • 1 Cup Shredded Cheddar Cheese
  • 3 –4 Jalapeños Finely Diced
  • 6 Slices Cooked Bacon Crumbled
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1/4 Teaspoon Garlic Powder Optional

Instructions
 

  • Preheat oven to 300°F.
  • Bring water to a boil for the water bath.
  • In a blender, combine eggs, cottage cheese, and cream cheese. Blend until smooth and creamy.
  • Pour mixture into a bowl and stir in cheddar cheese, jalapeños, bacon, salt, pepper, and garlic powder.
  • Grease a muffin tin or use silicone molds.
  • Pour mixture evenly into each cup.
  • Place muffin tin into a larger baking dish.
  • Carefully pour hot water into the dish until it reaches halfway up the sides.
  • Bake for 30–35 minutes until just set (not browned).
  • Let cool slightly before removing.
