  • Mix dry ingredients separately
  • Flour, sugar, baking powder, baking soda, salt.
  • Fold dry into wet — DO NOT overmix (lumps = fluffy pancakes).
  • Rest the batter (5–10 min)
  • Preheat pan or griddle to medium heat, lightly grease.
  • Pour 1/4 cup batter
  • Cook until bubbles form, flip once.
  • Serve immediately
