- 6 Large Eggs
- 1 Cup Cottage Cheese
- 1 Cup Fresh Spinach Chopped
- 3/4 Cup Crumbled Feta Cheese
- 1 Clove Garlic Minced
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
Preheat oven to 300°F.
Bring water to a boil for the water bath.
In a blender, combine eggs and cottage cheese. Blend until smooth.
In a skillet, lightly sauté spinach until wilted. Remove excess moisture by pressing or draining.
Stir spinach, feta, garlic, salt, and pepper into the egg mixture.
Grease a muffin tin or use silicone molds.
Pour mixture evenly into each cup.
Place muffin tin into a larger baking dish.
Carefully pour hot water into the dish until it reaches halfway up the sides.
Bake for 30–35 minutes until just set (not browned).
Let cool slightly before removing.
