Ingredients
  

  • 6 Large Eggs
  • 1 Cup Cottage Cheese
  • 1 Cup Fresh Spinach Chopped
  • 3/4 Cup Crumbled Feta Cheese
  • 1 Clove Garlic Minced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper

Instructions
 

  • Preheat oven to 300°F.
  • Bring water to a boil for the water bath.
  • In a blender, combine eggs and cottage cheese. Blend until smooth.
  • In a skillet, lightly sauté spinach until wilted. Remove excess moisture by pressing or draining.
  • Stir spinach, feta, garlic, salt, and pepper into the egg mixture.
  • Grease a muffin tin or use silicone molds.
  • Pour mixture evenly into each cup.
  • Place muffin tin into a larger baking dish.
  • Carefully pour hot water into the dish until it reaches halfway up the sides.
  • Bake for 30–35 minutes until just set (not browned).
  • Let cool slightly before removing.
