Polenta is such a comfort food. Yet, I don’t feel like it’s well known in the US. You really only see it in fancy steakhouses.
Where does Polenta come from?
Polenta made its start in Northern Italy. It originated as stone ground corn and cooked into a mush mainly for peasants, it is said. Well I’m sure glad this dish has stood the test of time because it is delicious. If you go to Italy and look for this dish in the south, you most likely won’t find it. It is mostly a Northern Italian dish and regions in Italy vary like US states. They can be very different. Each region has its own specialties with meats, pastas, cheeses and more.
If you ever get a chance to visit, try to make it to more than one town in Italy. It is crazy how much each town is different.
It’s simple.
This recipe has few ingredients but the flavor is rich. This creamy dish is such a comfort food to me. My favorite way to have it is actually a way that I had never heard Italians making it. My husband came home from a restaurant he ate out at while on a “missed meal” and described the dish to me. It was so bizarre! I couldn’t believe chicken parmesan was served over polenta.It was always made with chicken and spaghetti in my family. I had to try it. My mind was blown! It was amazing!

What’s left but to cook? I love cooking this in a dutch oven on the stove. Especially now that its fall, it’s so soothing and easy to make. There’s no stress have a glass of wine and cook your meal. Like I said above this dish is great for Chicken Parmesan. However, one of my personal absolute favorites to pair this with is braised lamb or beef. I love when fall hits because I start braising and dinners just get more exciting for me. Plus my family loves its so that’s a huge bonus.

- 1 Mixing spoon
Instructions
- Pour broth and cream in dutch oven and pour in the polenta on medium heat.
- Stir as everything heats up and then turn down the heat to low.
- After about 5 minutes you will feel it thicken, add the milk and water and salt.
