Do you have bananas sitting on your counter that are about to go bad? It seems like I always do. One week we can go through 20 bananas, the next they are all sitting on the counter about to go bad. This is where these Chocolate Chip Banana Muffins come into play!
Ingredients you will need
I’m typically making these for my kids as a “treat” but I always make sure I use all organic ingredients. That way they are getting the best ingredients into their body. Also, organic foods retain their nutrients much better than inorganic. The list of ingredients is small, you will need:
- Flour
- Butter
- Sugar
- Eggs
- Baking Powder
- Salt
- Cacao Powder
- Dark chocolate Chips
Using dark chocolate chips (with real cacao) is one of my favorite tricks to getting some added benefits in anything my kids eat. If you want to know more, check out my blog The Benefits of Dark Chocolate. Yes, they are a treat, but it is one that has more benefits than just your standard milk chocolate chip.
These come together quickly and are easy to make with kids! I use a jumbo cupcake tin. You can also make these in regular size cupcakes or in a loaf pan if you don’t want to take the time to make individual treats.
Chocolate Chip Banana Muffins
Equipment
- 1 Kitchen Aid Mixer (Or hand mixer)
Ingredients
- 1 Stick Butter (Softened)
- 1 Cup Sugar
- 3 Ripe Bananas
- 2 Whole Eggs
- 1 Tsp Vanilla Extract
- 1¼ Cup Organic Flour
- 1 Tsp Baking Soda
- ½ Tsp Sea Salt
- 3 Tbsp Cacao Powder
- ¾ Cup Semi-Sweet Chocolate Chips
Instructions
- Preheat oven to 350℉
- Cream together softened butter and sugar.
- Add Vanilla Extract, bananas and eggs. Mix until just together.
- Add flour, salt, baking soda and cacao powder. Mix until just together.
- Add Chocolate chips and gently mix.
- Using your 3 Tbsp Cookie Scoop, place 2 portions in each cupcake liner (or 6 tbsps if you are not using a scoop)in your lined jumbo cupcake tin.
- Bake for 25 minutes or until toothpick comes clean.
