These are the cookies I grew up eating. These are an amazing treat to splurge on with some classic vanilla ice cream. In fact, I’m making these cookies specifically for Ice cream cookie sandwiches. These are thinner and chewer than a bakery style cookie. We are going camping where there isn’t a good store around so I am premaking treats as a surprise for the kids.

Everyone has their own preference on chocolate chips/chunks. I typically go for semi-sweet. However on occasion I do milk chocolate. That does give them a softer texture. If I’m going for a more bakery style I use chocolate chunks. Those are harder to find in stores now so I always grab a pack if I see them! I use mini chocolate chips mainly if the cookie is being served to kids. Example, for a class party. They are easier for them to bit especially at a younger age.

  • Beat butter, sugars, egg and vanilla until light and fluffy.
  • Mix flour with salt and soda, blend into butter mixture.
  • Stir in chocolate chunks and nuts.
  • Chill 1 hour.
  • Drop cookies 2 inches apart on parchment lined cookie sheet. About 1 heaping tablespoon each.
  • Bake at 350℉ for 12-15 minutes.
  • Let cool 2 minutes before removing. Let finish cooling on cookie rack.
  • Cookies will be firm when cooled.
