History of Caesar Salad Dressing
Contrary to popular belief, the Caesar salad was not invented in Rome. It was actually invented in Tijuana of all places by an Italian-American named Caesar Cardini in 1924. Story has it that during a Fourth of July rush their kitchen was low on supplies which led to Cardini improvising and creating this salad out of necessity. 100 years later it is still a beloved salad that we all know and recognize!
I have to say when I started making this, I was worried about the anchovies. I don’t mind fish at all, in fact I love it. However, I couldn’t wrap my head around how the flavor would work in the dressing. I always knew there were anchovies in the traditional Caesar Salad Dressing, I guess I just never realized how important it was. Turns out the anchovies are what really put this dressing over the top.

Ingredients
- 1 Whole Egg
- 1 Cup Avocado Oil
- 1 Clove Garlic Minced
- 3 Tbsp Lemon Juice
- 3 Tsp Dijon Mustard
- 2 Tsp Worcester Sauce
- 3-5 Whole Anchovy Filets
Instructions
- Add egg to your mason jar, immersion blend for 10 seconds on low.
- Increase speed to high and slowly pour in your one cup of oil, moving immersion blender up and down. Should take 20-30 seconds to thicken.
- Chop up anchovies (3-5 per your taste)
- Add mustard, Worcester Sauce, minced garlic, lemon juice and anchovies into mason jar.
- Immersion blend until all mixed together.
