Ingredients
  

  • 8 Eggs
  • 1 Cup Cottage Cheese full-fat = best texture
  • ½ Cup Shredded Cheese cheddar, gruyère, or mozzarella
  • ¼ Cup Heavy Cream
  • ½ Tsp Sea Salt
  • ¼ Tsp Crushed Black Pepper
  • Mix Ins (Sausage, bacon, veggies etc) Optional

Instructions
 

  • Preheat oven to 325°F
  • Grease or line a 12-cup muffin tin (silicone works best)
  • Add to blender: Eggs, cottage cheese, heavy cream, salt and pepper.
  • Blend until completely smooth (20–30 seconds) 👉 This is the secret to that velvety, Starbucks-style texture
  • Add Mix-Ins
  • Divide any meats/veggies into muffin cups
  • Pour egg mixture over top (fill ~¾ full)
  • Place muffin tin inside a larger baking dish
  • Pour hot water around it (about halfway up the sides)
  • Bake for 25–35 minutes
  • Centers should be just set (slight jiggle = perfect)
  • Let cool 5–10 minutes
  • Run a knife around edges or gently pop out
