- 8 Eggs
- 1 Cup Cottage Cheese full-fat = best texture
- ½ Cup Shredded Cheese cheddar, gruyère, or mozzarella
- ¼ Cup Heavy Cream
- ½ Tsp Sea Salt
- ¼ Tsp Crushed Black Pepper
- Mix Ins (Sausage, bacon, veggies etc) Optional
Preheat oven to 325°F
Grease or line a 12-cup muffin tin (silicone works best)
Add to blender: Eggs, cottage cheese, heavy cream, salt and pepper.
Blend until completely smooth (20–30 seconds) 👉 This is the secret to that velvety, Starbucks-style texture
Add Mix-Ins
Divide any meats/veggies into muffin cups
Pour egg mixture over top (fill ~¾ full)
Place muffin tin inside a larger baking dish
Pour hot water around it (about halfway up the sides)
Bake for 25–35 minutes
Centers should be just set (slight jiggle = perfect)
Let cool 5–10 minutes
Run a knife around edges or gently pop out
