Homemade Gnocchi

Let me tell you how SIMPLE homemade gnocchi is. You can make enough for dinner in under an hour!

Making all types of pasta at home started for me as a little kid. My moms side of the family is Italian and we would have a gnocchi day where we made multiple batches and froze them for later and also had them for dinner that night with Banja (Bolognese is the “Typical Italian” term, my family uses a dialect from Piedmont that is not well known anymore.In fact, my family doesn’t even pronounce it “gnocchi” it sounds more like “gnox”)

History of Gnocchi

Many regions in Italy claim gnocchi as theirs. It is mostly associated with the Northern Regions, especially, Piedmont and Lombardy. There have also been many versions of gnocchi throughout history dating back to the 16th Century. I looked up how it evolved and it looks like these didn’t even start with potatoes how we all love them today!

Regardless of who made them first, or how they came to be, I’m happy the recipe was passed on and on so we can enjoy them today.

Making the Pasta

Here’s the thing, making gnocchi is actually FUN. It is also a great way to get your kids in the kitchen and help making dinner. There really is no way to mess this up.

You put the mashed potatoes and flour together and make a well in the middle, then put the eggs in the well. To mix you can use a fork to start, but we always used our hands. It is part of the fun.

Once mixed together, kneed for about 10 minutes then let it rest for a half hour. Once it is rested, you pull off some of the dough and roll it out into a snake like below.

The size is up to you, some like them small, some like them medium but large is usually too much of a mouth full. Once you have a nice long snake cut them into 1 inch pieces. Then you are going to take your fork and a gnocchi in your hand and roll it along the fork prongs. This will give you the line texture you typically see in the pasta.

And don’t forget to make sauce! You can pair it with either one of these sauces below and your gnocchi will turn out amazing!

  • Peel potatoes and boil until cooked. Then mash them.
  • Place on silicone mat and make a well.
  • Add Flour and then the eggs in the middle.
  • Use a fork to mix the eggs, once incorporated use your hands to kneed.
  • Separate a piece off and roll until you have a long smooth line.
  • Use a knife to cut 1 inch portions.
  • Using a fork, take one piece and slowly roll it down to create ridges.
  • Cook in boiling water for roughly 3 minutes.
