Reasons why I try to make this most Sundays

Weekdays get really busy. Being intentionally slow on Sundays is a choice. It’s nice to not be rushed, to not feel like you have to do as much. As moms, we always have a long list of chores, and for me a lot of them get done on Sunday.
Putting this meal in the crockpot in the morning allows me to check 1 thing off my list earlier in the day and feel like I can spend time with family. It doesn’t take long, is packed with flavor and will even leave you with leftovers! We pair this with my 15 minute creamy polenta recipe.
What you will need for this Sunday Roast recipe:
The main thing is the slow cooker/crockpot! That is key here. I’ve had a couple of them through the years and just upgraded to this one. I needed something to hold bigger Sunday Roasts as my family keeps eating more and more.
The next roast I get to cook is… wait for it… a moose roast! So stay tuned on a recipe for that and see what I come up with. This recipe is for a beef roast.
I use carrots, potatoes and onions. Feel free to add any vegetables that you think would pair well with this! It is a hearty meal perfect for a cozy fall or winter day. A hot toddy for a night cap isn’t a bad idea either.

Sunday Roast for the Win
The best part about this meal is honestly that it cooks itself. By the end of the evening, you’re eating a delicious meal with your family with minimal prep. Even though I titled this “Sunday Roast” you can make this any day of the week. This recipe is so simple you can throw it together before you drop the kids off for school. It will cook while you are gone at work (or while you are doing something from home) for an easy weeknight meal.

Sunday Roast

Ingredients
- 4 lb Roast
- 1 Medium Onion
- 4 Medium Potatoes
- 4 Whole Carrots
- 16 Oz Beef Bone Broth
- 2 Sprigs Rosemary
- 2 Tsp Salt
- 1 Tsp Crushed Black Pepper
- 2 Tsp Smoked Paprika
- 4 Cloves Garlic
- 2 Tsp Onion Powder
- 2 Tsp Thyme
Instructions
- Turn Slow Cooker on Low. If you have a digital one, set it for 8 hours.
- Chop Vegetables, garlic and place in slow cooker.
- Pour in Bone Broth (or any broth that you are using.)
- Mix thyme, salt, pepper, and onion powder together.
- ***Optional: Grab a pinch and sprinkle over what is in the slow cooker.
- Use the rest to season the meat.
- Place meat on top of the Vegetables and add the rosemary directly on top.
- Let cook for 8 hours then serve as is or add it to a creamy polenta.
