The Best Jalapeño Poppers

We use to buy these at our little market all the time. However, they were extremely overpriced and lacked flavor in my opinion. I liked them, but I didn’t LOVE them.

I started making them and we won’t be going back to store bought unless it is an emergency situation! They don’t take a lot of time and I actually found a way to cut down on prep time as long as you are not worried about having the “typical popper look” with the bacon wrapped around. You can of course do this but I’ve found its unnecessary.

When you buy them from the store they use cream cheese with nothing else in it. Adding in some simple ingredients elevates these to another level. Get creative! I tried a few different ways to do this before we settled on our favorite way.

The prep

To start, chop off the tops of the jalapeños and slice down the middle of all of them. Then, scoop out the middles. Be sure not to touch anything else like your face when you are doing this. I learned the hard, painful way that they will irritate your skin and can hurt pretty bad if you get a really spicy one.

Next, mix together your cream cheese and other ingredients. Grab a spoonful and place into the scooped out jalapeño. Then take your bacon and cut in half then slice down the middle longways. Then place on top and into your pan and they are ready to cook! These really are the best jalapeño poppers around!

These are great for an easy week night side dish or wow your neighbors at your weekend BBQ. I love making these ahead of time and being able to keep them in the fridge up to a day ahead. That way there is one less thing to do if you are hosting your own party or bringing them to friends and family. The recipe below is what we do during a weeknight but there are always plenty.

It really is easy to make all those things we love at home from scratch. My mom use to make 90% of what we had at home from scratch and I’m so grateful for that. Growing up and seeing her in the kitchen everyday making those meals has made such an impact on how I cook at home. If I hadn’t grown up seeing that, I may not have wanted to do as much in the kitchen as I do now.

Ingredients
  

  • 12 Whole Jalapeños
  • 1 8 oz. Block of Cream Cheese
  • 2 TBSP Garlic Powder
  • 1/2 Cup Pepper Jack Cheese
  • 1/2 Cup Shredded Parmesan
  • 1/2 Lb Bacon

Instructions
 

  • Slice the tops of Jalapeños and slice down the middle longwise.
  • Scoop out seeds of Jalapeños.
  • Mix together cream cheese, garlic powder, pepper jack and shredded parmesan and fill the jalapeño halves.
  • Slice the bacon to the size of the jalapeños. This will vary on each one so I typically have lots of different sizes.
  • Place a strip of bacon on each one of the jalapeños.
  • Place in baking dish or throw away tray and place on the BBQ for 35-45 Minutes. (It takes the same amount of time in the oven if you are choosing to do it that way.)
  • Check them often to make sure they don't burn and pull them out when they are done!
