Now, don’t get me wrong, you can spend hours making tomato sauce and letting it simmer and infuse flavor. I make those recipes as well. But sometimes, you run out of stock and you need it in a pinch and that’s what this recipe is great for!
It comes together in about 15 minutes (although you can simmer it for as long as you want) and it turns out great. I often use cherry tomatoes for this sauce because my garden produces a ton of them! Having a garden has been such a blessing. It’s so nice to be able to go out and add our own produce to our meals.
I’m still learning so much about gardening though. I mainly produced squash, tomatoes, arugula and peppers this year. I had a couple of veggies that didn’t work out so I will have to work on that for next year.
Here’s how simple Tomato Sauce is to make:
Add olive oil and tomatoes to your pot on medium heat. Let cook for 5 minutes, while it is cooking use your wooden spoon to help break up the tomatoes. After about 5 minutes grate in your garlic. Let simmer for 10 more minutes breaking up the tomatoes more if you like. After 15 minutes use your immersion blender to blend everything up together. If you like, you can strain out the seeds. If I’m in a hurry I will leave the seeds in but normally I use a sieve and strain the sauce.

I use this sauce for Chicken Parmesan with Polenta and it is so simple yet has great flavor! Using organic or homegrown tomatoes really helps this recipe. If you have ever had a homegrown tomato you know how big of a difference there is.
