- 2 Tablespoons Olive Oil
- 1 Small Onion Diced
- 3 Cloves Garlic Minced
- 4 Cups Chicken Bone Broth
- 2 Cups Cooked Chicken Shredded
- 8 Lasagna Noodles Broken Into Pieces (Or any pasta you have on hand. I've used fusilli in a pinch and it worked great.
- 1 Cup Heavy Cream
- 1 Cup Ricotta Cheese
- 1 Cup Shredded Mozzarella Cheese
- 1/2 Cup Grated Parmesan Cheese
- 2 Cups Fresh Spinach or arugula
- 1 Teaspoon Italian Seasoning
- Sea Salt To taste
- Crushed Black Pepper To taste
Heat Olive Oil In A Large Pot Over Medium Heat. Add Onion And Cook Until Softened.
Stir In Garlic And Cook For 1 Minute Until Fragrant.
Pour In Chicken Broth And Bring To A Simmer.
Add Broken Lasagna Noodles And Cook Until Tender.
Stir In Cooked Chicken And Italian Seasoning.
Reduce Heat And Add Heavy Cream, Stirring To Combine.
Add Ricotta, Mozzarella, And Parmesan Cheese. Stir Until Melted And Smooth.
Add Spinach And Cook Until Wilted.
Season With Salt And Pepper To Taste And Serve Warm.
